12 Quick Healthy Lunch Ideas

Now that we’re at home 95% of the time, quick healthy lunch ideas are like gold. In the last three weeks, I’ve made nearly every single meal at home, so I thought I’d share my easy, healthy lunch ideas with you. Truth be told, I’m usually a sucker for an everyday salad, but being in isolation has forced me to get creative because I get bored having the same thing at lunchtime every afternoon.

From crisp bibb lettuce to tender teriyaki chicken, I love this lightened up asian dish because it hardly tastes healthy. You can make it as a salad as well!

Dave’s Killer Bread Deli Sandwich

Something about sandwiches reminds me of grade school, so sometimes I’ll make this if I’m in a rush or want a “throwback” lunch. This one goes beyond the PJ&J for a more adult take. Pair with an apple, carrots with hummus, or tortilla chips for crunch.

High-Fiber Turkey Wrap with Honey Mustard

This is similar to the above, but I used Chick-Fil-A’s wrap as inspiration for this handheld. I like these wraps from Amazon and I’ll fill them with turkey or grilled chicken, tons of veggies, and Trader Joe’s honey mustard for a touch of sweetness.

Skinny Chicken Salad Sandwich

I’ve been using this recipe forever, and it’s just as good today as it was five years ago. I love the taste of chicken salad, but this greek-yogurt based version lightens it up and removes the mayo, which my stomach doesn’t handle well anyway.

Rotisserie Chicken with Fresh Greens

My lunch staple. I buy 2-3 rotisserie chickens from Whole Foods (organic) at the beginning of the week, then I shred and freeze the breasts in 3oz. portions so they last longer. My go to salad recipe is here! You could also make it a salmon bowl with fresh coho or Trader Joe’s frozen salmon burgers.

Chinese Chicken Salad with Sesame Dressing

I find crunchy salads so satisfying, and this chinese chicken salad can be made ahead of time if you want! It’s great for a family dinner or weekend backyard cookout.

Salsa Shredded Chicken and Cilantro Lime Rice

One of my all-time favorite crock pot “tricks” is to throw a couple of chicken breasts in with a jar of mild salsa. Let it cook, then shred when finished and—voila!—lunch is served. I’ll pair mine with Trader Joe’s frozen brown rice, a veggie, and squeeze lime and cilantro to make it ultra-refreshing!

Teriyaki Chicken and Coconut Rice

We rave about our Soy Vey dressing and for good reason. It goes with absolutely everything and adds so much flavor. I try to marinate chicken for at least a few hours prior to cooking on the grill or in the oven. When we have this made ahead of time, I’ll slice up a breast and then flavor Trader Joe’s frozen brown rice with coconut oil and a pinch of salt for more of a true asian dish.

Turkey Burgers with Sweet Potato Fries

Another Trader Joe’s creation for the win here. We love their frozen Turkey Burgers and will slice up sweet potatoes for an efficient air fryer similar to this ninja air fryer 400 to make fries! You can also slice the sweet potatoes lengthwise to make sweet potato sliders, and Trader Joe’s chicken burgers work just as well.
